Yin-Nourishing Double Snow Dessert

Best dessert for the late-night owls.

This yin-nourishing dessert consisting of snow fungus, snow pear, red rates, lotus seeds, goji berries, and rock sugar might help you soothe your dry throat and relieve heaty symptoms.


What you need:

20g of dried snow fungus

1x snow pear / Asian pear (cut into bite-sized)

30g of dried lotus seeds (pre-soaked for 10 min)

20g dried Jujubes

10-12g of dried goji berries

Rock sugar (as desired)

Instructions:

Pre-cooking preparation:

  1. Soak the dried snow fungus in cold water for 2-3 hours (or warm water for ~2 hours)*

  2. Once the snow fungus has softened, trim off the tough yellowish part at the bottom of the snow fungus for a better texture before tearing them into small pieces.

  3. Soak the lotus seeds for 10-15 minutes

  4. Cut the snow pear in bite-sized potions

  5. Cut the dried jujubes in half and remove the seed (optional)

Cooking instructions:

  1. In a medium or large-sized pot, add the snow fungus and water. Bring them to a boil, and reduce the heat to medium-low. Cover and simmer for 30 minutes before adding the snow pear and dried lotus seeds.

  2. Then, cook for another 30 minutes before adding the rest of the ingredients.

  3. Lastly, simmer under low heat for another 30-40 minutes if you prefer the snow fungus to have a slightly crunchy texture or another 60-80 minutes if you prefer to have a softer and slightly sticky texture.

*Note: Actual soaking time depends on the size of the snow fungus

You can serve this dessert hot or cold but personally, I prefer it cold šŸ¤£
