Honey Chrysanthemum Jelly

Trying to make a cooling snack to combat the hot and humid afternoons? Try making this delicious and cooling afternoon snack that both the old and young can enjoy!




Ingredients list: (makes ~18 jellies)

Water 1000ml (add 1200ml to boil)

Yellow Chrysanthemum Buds 15g

Goji Berries 15g (optional)

1 packet of Agar-Agar/jelly powder 10g (depends on which brand you are using)

Raw sugar 25g*

Honey 50g*


*This recipe requires honey to be added on top of the jelly as the last step to minimize the amount of sugar in the jelly itself and hence the jelly won't taste as sweet. For those who prefer a sweeter jelly, you may choose to add the sugar/honey amount as desired.


Steps:

  1. Add the Yellow Chrysanthemum and goji berries into boiling water and boil for 5 minutes on low heat.

  2. Turn off the heat and use a strainer to filter out the flowers.

  3. Measure and pour 1 litre of chrysanthemum tea into the pot.

  4. Mix the raw sugar and agar-agar powder together before adding them to the chrysanthemum tea.

  5. Heat up the mixture at low heat and stir well.

  6. Once the sugar and agar-agar powder has dissolved, turn off the heat and keep stirring to cool the mixture. (Stirring is crucial to prevent the jelly from hardening before honey is added)

  7. Once the mixture has cooled down, add in the honey and stir well.

  8. While the mixture is still hot, pour into jelly moulds and leave it to cool.

  9. Refrigerate the jelly for 1-2 hours once the mixture has completely cooled down.

  10. Serve cold with honey.

Tip: Use a toothpick if you have difficulty removing the jelly from the jelly moulds.


And there you go, your delicious tasting honey chrysanthemum jelly is ready to serve! You may also choose to add red dates or goji berries for enhanced flavor!
